Spring salad
3-4 servings
Prep time 10 min
3 hard eggs, 1/2 cup canned whole corn kernels, 1/2 long cucumber, 1/2 cup thinly sliced green onions, 2 tablespoons mayonnaise, salt, pepper.


Place eggs in a medium saucepan, and cover with cold water. Bring water to a boil, and simmer for 10 to 12 minutes. Remove from hot water, cool, peel and dice. Chop cucumber into 1 inch cubes. In a small bowl mix together eggs, canned whole corn, cucumber, and onions. Add mayo, salt and pepper. Cover and chill in the refrigerator approximately for 10-15 minutes before serving.
