Springtime Waldorf Salad

This is a hearty salad, chock full of goodies that will fill you up and put a zing in your step. I'm told avocados provide close to 20 essential nutrients including fiber, potassium, Vitamins K, E and B. Almonds are filled with iron, magnesium, phosphorous, zinc and copper. And that's only two of the ingredients! Don't you just love it when something delicious is doing you good?  Enjoy this for lunch on a warm spring day.



Here's what you'll need for this super healthy salad.


1 head of romaine lettuce, chopped into ribbons


1 gala apple, washed, cored and cut into chunks (skin left on)


1 avocado, cut into chunks


1 handful of almonds


1 cup of cranberries


4 oz of goats cheese, cut into chunks


A good handful of fresh basil


1 tablespoon of Dijon mustard


1 tablespoon of red wine vinegar


Juice and zest of a lemon


4-6 tablespoons of olive oil


salt and pepper


Wash and chop the lettuce, place in a large salad bowl.  Add all the other salad ingredients.


To make the dressing, combine the mustard, vinegar, lemon juice and zest, salt and pepper in a bowl.  Add the olive oil one tablespoon at a time and whisk to combine. 


Pour over the salad and serve.
