Grilled Red Snapper in a Lemony Herb Marinade.

This was melt in your mouth delicious.  And SO easy.  I used my favorite piece of equipment, the grill pan and hey presto dinner was done in a moment.  If you can possibly remember to marinate the fish for a few hours before hand all the better, but don't worry if you can't, sometimes life is just too complicated.  What I love about this sort of food is its simplicity and that fresh fish, lemon and herbs deliver such a great result.


Grilled Red Snapper with Lemon, Garlic and Fresh Herbs.


2 or 3 good sized fillets of red snapper


4 tablespoons of olive oil


Zest and juice of 2 lemons


4-5 cloves of garlic, minced


A good handful of fresh herbs, I used parsley, oregano and thyme


Pinch of red pepper flakes


Sea salt and black pepper


Mix together all the ingredients except the fish.  Place the fish fillets into the marinade and leave for a couple of hours if possible.



Heat a dry grill pan until really hot on the stove top.  Wipe the excess marinade off the fish and lay on the grill pan skin side down.  Don't move them around and leave them to cook for about 3 minutes.  Add the lemons to the pan as well and char nicely.



Gently turn them over and cook for a further 2-3 minutes or until fully cooked through.  Remove to a platter, squeeze a little more lemon juice over and a few more fresh herbs and serve immediately.
